Since Las Posadas starts this Tuesday, we really do not have anything formally planned for dinner. So, instead, I will be posting what we ate each night at all the different households.
That means, eating simple on Monday, then enjoying ourselves on Tues. Here are a few recipes you could serve if you were hosting or just enjoying this time of the season.
Monday 15th
Grilled cheese sandwiches with tomato soup and popcorn. Leftover salad (mixture of greens, tomatoes, cucumbers, and shredded carrot) from Sunday's dinner and fresh fruit salad (cut up green melon, grapes, apples, and oranges. Blueberries and strawberries are nice too, but may be too expensive this time of the year.)
Tuesday 16th: Lasagna w/Salad, Garlic Bread Slices and Chocolate Cake
Wednesday 17th: Soups (pumpkin curry, chicken noodle, etc.)
Thursday 18th: Polish Food
