Dec 15 - 21 Las Posadas

Since Las Posadas starts this Tuesday, we really do not have anything formally planned for dinner. So, instead, I will be posting what we ate each night at all the different households.
That means, eating simple on Monday, then enjoying ourselves on Tues. Here are a few recipes you could serve if you were hosting or just enjoying this time of the season.

Monday 15th
Grilled cheese sandwiches with tomato soup and popcorn. Leftover salad (mixture of greens, tomatoes, cucumbers, and shredded carrot) from Sunday's dinner and fresh fruit salad (cut up green melon, grapes, apples, and oranges. Blueberries and strawberries are nice too, but may be too expensive this time of the year.)

Tuesday 16th: Lasagna w/Salad, Garlic Bread Slices and Chocolate Cake

Wednesday 17th: Soups (pumpkin curry, chicken noodle, etc.)

Thursday 18th: Polish Food

Dec 8 - 14 Mary and Mexican Food

Monday 8th--- Feast of the Immaculate Conception
Dinner: Black peppered chicken with Fettuccine Alfredo. Add a bag of frozen or fresh chopped vegetables (I prefer a frozen mixture of carrots, cauliflower, and broccoli. I also add sliced mushrooms). The theme for today's dinner is WHITE to represent the purity of Mary.

Dessert will be a rice pudding or Mary Blue Jell-O Cake . To make the dinner even more special take a large white candle and tie a blue or pink ribbon around to represent the Virgin Mary. Say a prayer for this special Feast, sip some Our Lady of Mt. Carmel tea, and have the children color while you are cooking.

Tuesday 9th--- Feast of St. Juan Diego
Dinner: Choose a favorite enchilada recipe. I really like the this Beef and Cheese Enchiladas. recipe from Shawna's Recipes and her yummy/ easy Mexican Rice dish. Puree some black beans straight out of a can for a side dish and eat the beans with tortilla chips.
Can't forget dessert! To represent the rose petals that fell from Diego's cloak make these creative from Chocolate Roses from Shower of Roses.

Wednesday 10th
Dinner: Papa Murphy's Pizza of your choice. Large Salad.

Thursday 11th
Dinner: Chicken Parmesan with Spaghetti Squash or Pasta of Choice
Think Chicken Parmesan with Spaghetti Squash, rather than actual spaghetti noodles. Use any left over salad from pizza night for a side dish. This looks like a mouth watering Chicken Parmesan from Bless O Lord.

Friday 12th --- Our Lady of Guadalupe
Breakfast: Crescent rolls to represent Our Lady standing on the crescent moon. Enjoy Hot Chocolate a treat for Aztecs and sip some Our Lady of Guadalupe Tea.

Dinner: Bean and Cheese Burritos, yellow Mexican rice, and tortilla chips with melted shredded cheese. Enjoy a red beverage, perhaps punch to represent the roses from Our Lady.

Sat 13th---Feast of St. Lucy
Breakfast: Hot sweet rolls of some sort with a steaming cup of coffee. Perhaps the children can serve it to you in bed?

Dinner: In Progress? Any Ideas for St. Lucia. Something with Saffron?

Sunday 14th
Dinner: Meatball Sub Casserole from Natalie's Recipe Box. Can you say WOW?! Add some sliced steamed zucchini and yellow squash for side dish.
